
In a bowl, mix the rice flour, cornstarch, baking powder, and sugar.
Add the lemon zest (or vanilla) and mix well.
Pour the seed oil and almond milk into the dry mixture and mix until a homogeneous dough is obtained.
If desired, add chocolate chips and mix gently.
Pour the mixture into oiled molds. Cook in an air fryer at 170° for 20-22 minutes.
