First, prepare the topping for the mini pizzas and set it aside.
Wash the cherry tomatoes, cut them into halves and quarters, season with salt and a tablespoon of extra virgin olive oil.
In a bowl, combine all the ingredients (250 g of type 1 flour, 100 g of water, 50 g of extra virgin olive oil, half a teaspoon of salt) and knead until you get a soft dough.
Then roll it out on a lightly floured surface with the help of a rolling pin.
Use a round pastry cutter to form the mini pizzas.
Place them on a baking tray lined with parchment paper and add the topping. Bake in a preheated fan oven at 200°C for 10 minutes
