
Vegetarian toast without butter and eggs, easy and quick. Ideal in spring and summer as a lunch or dinner saver.
Wash the zucchini flowers and cut them into pieces.
Cook the flowers in a pan with a little oil, capers, salt, and mint until tender.
Mix the ricotta with a tablespoon of water until a smooth cream is obtained.
Heat the bread (in the oven or toaster).
Spread the ricotta cream on the warm bread.
Finish with the cooked zucchini flowers and a sprinkle of oregano before serving.

You can substitute: rye bread with your preferred bread; ricotta with cottage cheese, goat or sheep ricotta. Suitable for packed lunches.
