Thaw the squid and crab meat.
Clean the squid: detach the head, remove the insides and cartilage, and wash under running water making sure to remove the skin.
Boil the squid in boiling water with garlic and a halved lemon for 15 minutes.
Drain the squid, let it cool, and cut it into rings.
Cut all the ingredients for the salad: halving the datterini, chopping the crab meat, and slicing the mango and carrot.
Assemble the salad by placing first the lamb's lettuce on the plate, then arugula, carrots, Taggiasca olives, crab meat, datterini, mango, and finally the squid.
