Cut the apples into small cubes and cook them in a pan for 5/10 minutes, adding 1 tablespoon of lemon juice, whole sugar, cornstarch, and cinnamon.
Meanwhile, prepare the pastry by adding all the liquid ingredients to the cold water and then the sifted flours.
After creating a dough (handle it as little as possible with your hands), put it in the fridge for 15 minutes.
Roll out the pastry and use a glass or cookie cutter to form the cookies. From the rolled-out pastry, also cut small strips that will be placed on top of the filling.
Place the cookie, then a spoonful of cooked apples, and then 4 strips.
Bake at 180 degrees for about 25 minutes (when they are slightly golden both on top and bottom, they are done).
