A delicious potato pizza cooked in a pan, easy and quick.
Wash and peel the potatoes, then slice them thinly.
In a bowl, mix the potatoes with olive oil, salt, pepper, and rosemary.
Heat a non-stick pan and add the potatoes, cooking over medium heat for 15 minutes, stirring occasionally.
In a separate bowl, beat the eggs with salt and pepper, then pour the mixture over the potatoes.
Cover and cook on low heat for 10-15 minutes, until the eggs set.
Flip the pizza onto a plate and cook for another 5 minutes on the other side.
Add the basil, cooked ham, and stracchino cheese.
Store in the fridge for 2 days.
Serve hot
