

A careful selection of pomace from Montepulciano coming from Marchigian vineyards is distilled in a bain-marie process using a discontinuous steam method. It is then aged in small oak barrels in a secluded and dark environment. During the five years of aging in the barriques that previously contained Vino Santo, the wood slowly imparts its aromas to the distillate, giving it a valuable roundness.
