The varieties of almonds that Valdibella uses for production are Tuono, Genco, Supernova Ferragnes, Romana, Pizzuta, and Fascionello, all typical Sicilian varieties. The almond harvest takes place in August and September. After harvesting and hulling, the almonds are dried for 3-4 days in the sun. Once dried, they are stored in bags in cool, dry warehouses. The shell perfectly protects the almond and allows it to be preserved throughout the year and even longer.
