
The dried Oregano from Pantelleria by Kattibuale captures all the fragrance of the Sicilian Mediterranean! It is an aromatic herb with an intense aroma produced in the terraces of the island and capable of withstanding often prohibitive climatic conditions: in fact, the fierce winds, cold nights, and long periods of drought of the island very close to Tunisia are well known. The oregano is harvested in late spring, starting from the agricultural fields closest to the sea, when the flowering period is practically over. Hand-harvested, it is placed to dry in the sun and subsequently crumbled, always by hand, according to traditional methods. The final phase of processing involves sifting the oregano several times to separate the woody residues and leaves from the final product, before the latter is stored in cool, dry places, preferably in the dark.
