After hand-selecting the grapes in early October, they are crushed the same evening of the harvest and placed in vats for fermentation. The wine is then introduced into 25HL French oak barrels for aging for about 18 months. The wine completes its maturation with bottle aging for about 12 months. Broad and complex. The sensations are floral, with notes of rose and violet, even wilted, raspberries and cherry jam, spicy, chocolate, cloves, black pepper, and nutmeg. Ruby red color tending towards garnet with aging. On the palate, it is dry due to the presence of generous tannins softened by aging in wood. To be paired with tajarin with game ragù, roast with hazelnuts, or wine-braised stew.
