Denomination: Gavi del Comune di Gavi DOCG Grape Variety: 100% Cortese Name: Gavi Alcohol: 12.5° Format: 0.75L Production Area: Scapaccino (AT), Piedmont, Italy Description: The grapes are pressed on the same evening of the harvest, and then placed in stainless steel vats. This is followed by alcoholic fermentation at a temperature of 15-16°C, necessary to preserve the delicate aromas. A brief aging in steel on the fine lees follows until bottling, which generally takes place at the end of spring. This wine combines freshness with good structure and complexity. Fine bouquet of good intensity and persistence that offers slightly floral aromas. Straw yellow color. On the palate, it is fresh, graceful, and of good structure. Try it with risotto with Swiss chard, tempura of squid and crispy potatoes, or chicken scaloppine with wine.
