The Imperial Soup is a traditional country dish from Emilia-Romagna, particularly popular in the areas of Modena and Bologna. This dish is made with semolina, eggs, grated Parmesan cheese, mortadella, a bit of butter, and nutmeg. The dough obtained by mixing these ingredients is spread on a baking tray and baked in the oven. The bites, soft inside and slightly crispy outside, soak up the hot broth, offering a pleasant contrast of textures. A generous sprinkle of 22-month-aged Parmigiano Reggiano DOP is recommended. It is a dish that is especially appreciated on cold days, when the steaming broth and the softness of the dough provide comfort and flavor.
