
“La Rustica” is a flour for polenta made from 100% whole red corn ground on stone, left unrefined and coarse. We preserve the germ, the heart of the grain, which is the most valuable characteristic. It then undergoes a light refinement necessary for proper preservation and better palatability. Beautiful to see and an important source of fiber is the corn bran. With the unique characteristic of minimal processing, the whole grain flour contains the mealy part of the corn, husk, and semolina. Gluten-free product.
