Extra virgin olive oil of superior category obtained directly from olives and solely by mechanical means. This is a single varietal EVO oil obtained from the cold extraction of Grignano cultivar olives from the area of Illasi, in the eastern Verona. The processing takes place through mechanical processes, that is, without resorting to processes or chemical substances, under conditions that do not cause alterations to the oil. The fruits that Azienda Agricola Luigi Ruffo uses come from the company's owned plots and are harvested in the autumn period only when the olive reflects certain characteristics and is ready to be collected. The attention devoted to the care of the plants and the ten days of harvesting ensure that the quality of the produced oil remains stable over the years and that the organoleptic characteristics do not undergo variations. So much so that Luigi, to verify the perfect time for harvesting, usually crosses his century-old olive groves on a small trailer and checks the condition of the plants, one by one.
