

An alternative way to eat legumes with the beauty of a pasta dish. Our Eliche are lighter and more digestible because the legumes are first soaked, cooked whole by steaming, peeled, dried, and ground. The ideal portion is 50 g which becomes 120 g after cooking in less than 5 minutes. Tip: cook directly in a pan, it doesn't need to be boiled in water! PER PORTION: in a shallow pan add 1/2 glass of water with a pinch of salt and a drizzle of extra virgin olive oil. As soon as it boils, add the "non pasta", mix and cover for a couple of minutes. You can add two vegetables or some tomato sauce. If you don't add anything that releases moisture easily, you will need to add water. Mix and season with EVO oil and whatever you prefer. It can still be boiled in water but (like everything you boil - see the vegetables themselves, better to steam them), the goodness that (by osmosis) goes into the water is lost, trust me, risottala, it might take a couple of extra minutes but it's special and will do you good!
